Rake and trail are tricky things to figure out but if in the event you want to rake your bike using trees, you can adjust the trail by changing the tire size. In short, there are calculators on line to help you. I wouldn't however, rake many HD models as they just look silly. If you want a raked bike, I would suggest using a new frame and creating an engineered rolling chassis.
As for wide tire kits. They are really well engineered for the most part and are great on many soft tail models. Keep in mind that your stocker motor will suffer trying to turn a fat tire so you may want to so motor upgrades...

My chopper had a 300mm tires and handled as well as my bagger of now a little better. The handling has more to do with the entire chassis as a whole rather than the width of the tire.
