ON my 05 I just remove the drain screw, let it drain. Remove the inspection cover and refill. The gasket is cheaper and no orings to deal with.
I refill with 1 quart of Mobil 1 synthetic atf. Much smoother and quieter shifting.
I assume you are referring to the chain adjustment cover. Not sure when but thats gone on newer bikes. Also what type of fluid, Dextron, Type F ---???
May I respectfully suggest that the derby cover be removed BEFORE removing the drain plug.
In the event one or more derby cover screws get butchered and can't, through traditional means, be removed, one could still ride the bike to someone that can remove the derby cover.
I'd say that is good, no make that awesome, advice. I've changed my primary fluid twice so far and the first time went smoothly. I even replaced the Torx bolts with Allen bolts. Well I must have torqued one of them down a bit tight because the second time I replaced my fluid I stripped out one of the bolts. I had already drained the fluid and thought to myself "I should have removed the cover first". Luckily, I was able to use a Dremel tool and grind a slot into the head and remove it with a screw driver.

The manual for my '04 Ultra specifies 36 - 60 INCH POUNDS. I believe 14 to 21 foot pounds would be sufficient to strip the threads in the primary cover.
