I also ride a Ducati Multistrada. The 10% ethanol blend has been damaging the plastic fuel tanks of these bikes, which expand and leak - I can only imagine what E85 at 85% ethanol would do!
It would do the same thing as E10.
I have a Monster 1100 and my tank is made from PA6, which can absorb water, and alread had the expansion issue, which caused fuel to leak onto my exhaust from around the fuel pump. However, PA6 can only absorb about 9% of its mass in water. No additional amount of water being absorbed by the ethanol in fuel will change this limit. E85 would not make this particular problem worse.
I don't, however, blame Ethanol for the issue. The problem with Ethanol is economical, not chemical. Manufacturers are perfectly capable of building vehicles which can run ethanol with no ill effects. Those that don't are just being lazy or trying to save a buck at the expense of their customers.
Ethanol in gas is a bad thing, steer clear of it when you can or use an additive like Amsoil Quickshot or PI that keeps ethanol dispersed in gas. It will gum up the works and especially in carbs, do not let it sit in tank for more than a week. This is including small engines like lawnmowers.
