There are alot of lists of instructions you can give passengers--lean the way I lean, look over my shoulder in the direction of the turn, etc., but the way I summed it up for my wife was "keep your ***** against my back." That way she will naturally follow your movements. (Plus it's nice!)
On top of that--don't put your feet down at stops, stay on the pegs, don't move around when we're stopped and don't get on or off the bike until I tell you I'm ready.
Well this is what I tell people BEFORE they get on the bike. I give them some general idea about getting on the bike, what to expect from me, I am not going to scare them because I want them to enjoy the ride so much they will want to do it more and where they can hold on if they choose.
Also:
1. I will tell you when to get on
2. I will tell you when to get off
3. Look over my shoulder in the direction of the turn
4. ALWAYS wait for me to tell you when to get off.
5. MOST IMPORTANTLY ENJOY THE RIDE!!!
Seriously I tell them not to smile cause they'll get bugs in their teeth.
Then I ride nice and easy so they get comfortable and enjoy the ride. Doesn't bother me much if they move around or lean the wrong way. Doesn't take long for them to get the feel of it.

I took a friend of mine for a ride after instructing about the leaning thing. This was on an '03 R6. We hit a curve at a nice lean angle, but nothing dangerous, and she started getting freaked out and leaning the other way. By the time we were through, I was over pretty far. I pulled over immediately and yelled at her. I told her if she gets scared, just close her *** and clench her *** cheeks because if she leans the other way, we just have to get closer to the ground.
