Yep, I wish I had Blair's job..as I understand from the video he started out as a bartender who liked hot foods and wanted to get rid of patrons late at night..
Now, I love hot and spicy food. I've done my own southern bbq since I was in my 20s. Last year I started used a new/old style ceramic grill called a big green egg.
I use hardwood charcoal with this grill and it can cook on low heat with minimal charcoal.
When I get some old hickory in it and it starts smoking, I'm sure my neighbors think I'm running a still over here! [X(]
I do marinades also ..with BBQ usually a concoction of apple cider and different spices..but lately I've been messing with a lot of different rubs.
Being close to Lexington, NC and in the heart of southern BBQ country - I'm a pork BBQ guy and I like some spice to it too - that's why I was curious about these rubs..mainly whether it overtakes the flavor of the pork or chicken with too much heat or if it complements it and just leave a hint of the heat behind once it's cooked.
