Default Either a Compression Issue or is it Fuel/Air?

So I recently Did a 1250 big bore kit on my 2002 Sportster. New cylinders, pistons, rings etc. While breaking in the new rings I took it easy for like 200 miles or so and slowly started picking up the pace as I broke in the new motor. Im now at about 480 miles over a 2 or 3 week span. out of no where it started backfiring more often than a usual sportster and if I open it up a little to much (Not quite racing but picking up speed fairly quick) it will bog, die, backfire, and start back up. Did I mess up the rings or cylinders by not following a strict break in procedure? I also re jetd my carb. It was a 160 main 40 pilot and a changed to a 180 main 45 Pilot. rejeting didnt really help its still acting about the same. if not worse. What are the chances of it being the rings or something on this fresh of a motor? or is it just my carb needs to be dialed in?

Rings will not cause the problems you described. If the rings are not seated or improperly installed they will just blow oil. The rings will cause smoking when you twist the throttle and put a load on the motor. I will say that you have a fuel or timing problem.
