So I just picked up this 2005 Fatboy... It has some kind of cams, an open element air filter, What looks like a thunderheader, and a power commander 5... Runs fantastic in every situation except under an extremely light load, trying to maintain speed... I'm not sure where to start... Any advice would be most appreciated.

Best time and money spent would be to take it to a qualified dyno tuner and get the entire mapping and recalibrated for the airflow changes and production variances.
While I realize you feel the bike runs great there will be a pleasant surprise to find out just how much better the bike will run not to mention the much improved fuel mileage experienced with proper recalibration/tuning.
Keep in mind, dyno tuning is way more to get the best running bike with the best power and mileage rather than the highest peak numbers on a piece of paper.
Just ask ANYONE who has been in your situation then got it tuned properly.

Thanks for the reply Bob... And I probably will do that... If you don't mind do you know how much something like this costs in your area? And I wonder if there's any troubleshooting I should do before I go in for that.
Check the simple stuff first like plugs. I've experienced the same thing on my 11 FLHTK, plugs were slightly fouled tho not bad. Spent around 5 bucks for new plugs, set the gap and all was good again.
