What's the difference between a single Map and dual Map? I'm told a dual Map is tuning both cylinders at the same time. Is a single Map doing each cylinder separate, or is it a Map the splits the difference between the two cylinders??

Not too familiar with that terminology for EFI maps.
Now, a "proper" map will be a map that was developed for your bikes particular DNA reading/adjusting both front and rear cylinders for each cylinders particular needs and wants.
I have heard before that there are some maps developed for a bike using a tweaked base map, sampling only the front cylinder for example, and making mirrored changes to the front "and" rear cylinder based only on front cylinder readings, Run Forrest run!
I'd thought the single map (as for PC-III, etc.?) would be when a single change value was used for both cylinders together and a dual map would be when each cylinder was mapped individually.
If all you did was add a different airbox or slipons, a single map would likely be sufficient. If you changed types of exhaust (like a Fullsac conversion, etc.) then a dual map would be in order no matter what else you did. The relationship between how the cylinders flow when you change the configuration that way changes too.
It is all about changing air flow through the motor. The Magneti-Marelli bikes had a base fuel map that was read off of the front cylinder and then the rear cylinder was trimmed with an offset. This means when you adjust the base fuel map it is adjusting both cylinders. Depending on the tuning device then you can tune the offset into the rear cylinder for balance. The Delphi system let's each cylinder be tuned independently for fuel and ignition so ultimately they will work in Harmony.
Now we are getting somewhere! The single Map is a compromise between the two cylinders, the dual is an independent map of each cylinder, which is more precise making both cylinders work closer in unison.
I have found a very well qualified shop in Reno that I have chosen to Map my bike. The years of experience these brothers have in the past with the NHRA and motorcycles is incredible. They have a 250I Dyno they employ and tune for customers all over the US. After grilling them I am more than confident in there experience to do the best possible tune available.
