IMHO, the O2's are important and shouldn't be taken from the system. That said, the connections are located in hidden places. On my Fatboy, the fromt connection is located behind the regulator (access by removing two screws & swinging the regulator down & out of the way). The rear connection is clipped under the oil tank.

Just follow the wires from the 02 bung until you find another connector.
On my bike they were less than a foot away.
You can easily disconnect and leave the sensors on the headers until
you get the headers off.
There were some tie downs that are easily removed as well.
