My guy in Chicago rebuilt my 78 for $700 bored the cylinders, put in a couple of heli coils. I have been riding the crap out of it for the last 2 years. Dont know where you are located but i could give you the info if you are close to Chicago.

I would guess that he is not putting anything away for his eventual retirement, nor is he saving to own his own shop some day. This may be good for his current customers, but in the long run it is a bad business plan. No business ever succeeds in the long run by working cheap. You have to both do high quality work and be paid for it.

I don't think that's what he charges everyone, I got him a bunch of business when I first met him. But I'd like him to succeed, so I'll pass that advice along.
