I just installed a Dakota Digital gauge set this winter and now can see my oil temperature. I run Redline in an 09 FLTR and while cruising on the highway at 60-75 mph in cool weather (50-65F) I am reading an oil temp between 235-250 F. Based on what I've read this is high, but I've also read that synthetics can handle higher operating temperatures.
The engine is stock, but I have added Bub 7 TDs, a high flow air cleaner, a SERT and had it dynoed. My AFR runs between 12.0 and 12.4 for the entire RPM range. (sheets attached). I also have the Hogg Chopp fairing lowers installed.
Is the oil temp something to be concerned about since I'm running synthetic oil? If so, does the info on the dyno sheets show any potential causes?
Did you check accuracy of the unit with boiling water. They can be out a lot sometimes. Other than that, 12 is too rich, and the power and torque seem low. Sumping will rob power and raise oil temps, but the graph don't seem to show it. Not an expert, but from my limited experience that's how I see it.

I have the same bike as you except I have a stage II 103, oil cooler, etc., etc. Also have dakota digital guages. Rode about 250 miles yesterday. Ambient air temp. was about 69 to 72 degrees. Oil temp. on HWY ran between 215 and 222. During the dead of summer here in Texas it will run 250 and I have seen it as high as 273 on 100 pluse degree days. I run Red Line 20W50.
I agree about your AFR being a bit low. To me, it sounds like your temp. might be a little high.
It is quite possible that the tuner has compensated for the altitude and set you a little on the rich side so that as you go down in elevation and the atmospheric pressure increases you dont get too lean at lower elevations. Asking the tuner would be much better at this point concerning the afr setting.
