Letchworth State Park
Kinzua Bridge State Park
PA Grand Canyon
The Canadian side has more to do. Check out the whirlpool Jet Boats. As the previous poster said, depending on where you are coming from there many be a few must do's on the way.
Me and my OL made this ride a few years ago - AWESOME trip! I say stay on the Canadian side. I'll post some pics here in a bit when I get back to my room.!

PA Grand Canyon & Kinzua Bridge are both in Northern PA. Kinzua Bridge is right near 219 which goes right to Bflo & the falls. PA Grand Canyon is about 75 or 80 miles west of 219. Letchworth State Park is in upstate NY, maybe 50 to 60 miles east of 219 & W Seneca NY. All 3 worth a stop if you have the time.
That was my first trip to the falls. I've flown over them on approaches to or departures from Buffalo, and from up at altitude (it's amazing that you can see them from 20,000 feet in the air passing over!!), but to be up close was amazing!
Funny coincidence - the morning after we arrived, somebody went in the falls - and lived!!!
I enjoy having dinner in the revolving dining room near every time I'm there. Check with the hotel/motel that you'll be staying in because many of them have package deals that include dinner there.

And for riding the Niagara Parkway in either direction from the falls is a nice ride. I particularly like the ride to Niagara on the Lake.
