If you are heading North on 191 .....
As gtmalone suggests on 191, Monument Valley is definitely worthy of a detour. The view is south, although the view North isn't bad either. It might be worth riding up to Bluff, then riding south through Mexican Hat (there is a 7/11 there, no ****...) down towards Kayenta and then back to Mexican Water.
When you are going through Flaming Gorge, maybe do a loop there also. 530 is very close to the lake and makes for spectacular views.
Try and stay in Jackson for a few days (i suggest reserving a motel there if you are planning on it, it is very busy in the summer) .... Park in front of the Cowboy bar in the evening as it is a great place to people watch. Go for a ride north up 191 and then come back on Teton Park Rd. When I did it this summer I must have stopped 20 times for pictures of the Mountains.
If you have never been to Yellowstone... I like to stay in West Yellowstone, again, reserve a motel, very busy in the summer. If you have a few days, do the North loop one day and the South Loop the second. If time allows, on the North Loop, run over Beartooth and back. If you have a lot of time on that day, add in Chief Joseph pass.
If you are heading North, you might want to consider riding back south from the border and taking Hwy 2 West to Browning and then 89 North to St Marys and then up and over Going to the Sun Road and onto Kalispel, Figure on 8 hrs for this bit. It is very slow going over GSR.

I have been on most of the 93. It is a nice ride. but have never been on the 191 that is the main reason wwe are going to take the 191 plus it is more of a bck road and goes through more little small towns I think
