themed ride? Certain types of sites for stops depending on what you are into? Cars, history, natural spots, whatever

Maybe pick a state and setup headquarters for a week and explore what that state has to offer. Maybe plan it around a festival they are having or something.
Here is WV allot of folks stay at Snow Shoe Resort or Canaan Valley Resort and ride all around the state.

I'm in upstate PA. Discovered WV last year. If you've never been, you'll love it. Beautiful scenery, things to do, and not a straight road in the whole state. New River Gorge Bridge, Seneca Rocks, Cass Scenic Railway, Trans Alleghany Lunatic Asylum, and great state parks. Then, north western PA is great riding, and right in your backyard. PA grand canyon, Kinzua Bridge State Park, village of Benezette, Hyner View State Park, and further south is Frank Lloyd Wright's Falling Water house, and the flight 93 memorial. Horseshoe Curve National Landmark near Altoona too. You'd be able to have a full 7 days, and stay sorta close to home. Just a few ideas if you have only 7 days.

I wouldn't waste time on Tunnel of Trees (Rt 119) in lower MI, overgrown, not that scenic plus too many sightseers in convertibles. Do stop for lunch, snack or dinner at Legs Inn, interesting Polish restaurant near Cross Village with beautiful views and landscaping.
X2
Just came back from there, just a different mode of transportation!

On our way to Copper Harbor!

Perfect ride from your location with 7 days available would be to do the entire Blue Ridge Parkway ride. If you like mountains and incredible beauty you can't go wrong with this famous ride. When you reach the end in Cherokee NC you should still have time left and lots of great rides in every direction.
