I live in Las Vegas, NV.
My idea was trying to stay on the coast of california as much as I can from the south to the north. Do any of you have any suggestions for any must see stops along the way?

I'd avoid south of Ventura unless you like lots of traffic. The rest of the ride, with a few exceptions, is great, from there to Oregon. Lots of traffic between Monterey and SF. Stop at the Fernwood resort in Big Sur, good food, great bar, decent motel rooms and very nice campground in the redwoods.
Be ready for cool, foggy weather in some parts and 100+ in others.

You definitely got to ride up Pacific Coast Highway 1, maybe hang out with the bikers at Neptunes Net in Malibu, then check out the beach and bars on lower State Street in Santa Barbara if you like ritzy, overpriced tourist towns.
Continue north through the impressive Gaviota Tunnel to the beautiful Santa Ynez Valley around Buellton. Superb riding on backroads in the best wine country ever around there and east to Solvang, Los Olivos and maybe even a run up Figueroa Mountain for twisty mountain roads. Check out the "Sideways" movie tour.
An absolute MUST see in Solvang is Virgil Eling's magnificent collection of motorcycles:

Solvang is a quaint touristy Danish-style village.
From there you can ride north through incredible scenery all the way to San Francisco and beyond. Biker heaven should you be so disposed.

You are going to have a great ride. I suggest that, if you have the time, that you go inland thru the giant redwoods along the Russian River to Occidental for a gorgeous change of scenery and a great meal at one of the old Italian restaurants in the old logging town. Not too far of a detour and a beautiful ride. Please keep us posted.
Just about any where you go from the Mexican border to the Oregon border on the coast is beautiful! You need to make your own adventure. Every time I travel the coast, I find something new to see. Each trip is a new and totally different experience.

+1 on the Coffee Pot. You can hang out on the decks nearby and watch the fishing boats come and go, hear the seals barking on the water. Great place to watch the sunset over Morro Rock.
