Gas up in Cambria, just south of San Simeon. Once past there, gas is very expensive and far between.
A good place to stop along the PCH near Big Sur is the Fernwood resort. Great bar, decent food, you can sit out back on the deck that is built right around redwood trees.
For an upscale place to stop, try Nepenthe, very nice, classy place, great views, expensive though.
Be ready for cool, even foggy weather along the coast, but it can get hot when you get a little way inland.
Big Basin Redwoods off rt 9 is another very scenic ride.

Did the PCH from Ventura to Ft. Bragg over 2 days at the end of June last year. Morning temps were 52-54F with clear skies and light winds. I never got to ride with just a t-shirt on. I put 12K miles on my new RK last summer and that was probably the best 600 miles of them all. Do not pass up the Big Sur on highway 1 north of San Simeon - I think it is the best stretch of the PCH.
