I just bought a Nikon 3200 digital camera. Is it safe to store a camera like this in a saddle bag on a long trip? Vibration, shock, etc.?

As long as it's secured and not getting knocked around you'll be fine. I carry my DSLR all the time.

Yeah, I've carried my Nikon D70 all over North America on my bikes with no issues.

I carry my D5200 with me all the time but I did buy a bag that has a suspension in it to hang camera by and hopefully smooth out the big shocks.
