I've spent a week camping on the Colorado River on the north side of Moab. I never felt a need to go more than Moab, Arches, Canyonlands and Dead Horse Point. All within ten miles.
I really feel sorry for those who pile on 500 miles days and think they have "seen" Arches at 60 mph.
And still just on the east side of the state you have Goblin Valley, Hovenweep, Monument Valley, Valley of the Gods, etc. You need at least a month to ride Utah.

We put on some big mile days, but as far as Utah goes, I have to agree. You really need to get off the bike and check out what that area has to offer. We spent 4 days out there on dirt bikes and really got into some remote areas. Gemini Bridges, White Rim, Kane Creek, Spider Trail, among many others. We also did the ride into Arches at sunset. Absolutely beautiful. It would be a shame to just blow by that.
This was a Faux Pas on my part. You're not supposed to go off the trails.
Cheryl and I are considering a ride out there again in Sept to give it another look. We'll add Bryce and Zion to the trip as well as the North Rim of the GC.
We spent a week there in October last year...folks in that area said that it gets unbearably hot in June-September. The ride from Zion to Bryce to Capitol Reef and Moab (Canyonlands, Dead Horse Point and Arches) was just incredible...by far one of the top-five rides in the US!!
A nice little known ride along the Colorado river to Castle Valley head towards the Lasalle mtns then back to hwy191just south of Moab. It's all paved.
