1980 Shovel stutters after a few miles

I bought a Shovel a year ago and changed a few things to make her look slimmer since this is what I like. She ran great until a week ago, when all of a sudden (I was like 20 miles in my roadtrip) she startet to stutter. First under acceleration, so I turned it down a little bit, then she startet stuttering while holding speed (like 50mph). I quickly pulled over into the next parking lot, as I pulled the clutch the motor stopped. I startet her up again and tried to get home, which eventually worked out as the motor went out 500 feet before my house allowing me to role into my driveway. I googled and found this forum. In another thread people suggested it could be the condenser so I ordered one and replaced it, tested it out and I thought the promlem was solved, again she ran just fine when after another 20 miles or so the same thing started again...so there is clearly a pattern here and my gut tells me she does not get enough fuel.
As far is my bike goes it's a 1980 HD Shovelhead with points and condenser, s&s super E, no mufflers. Elektronics were alle done by the previous owner. She ran great as i stated many times by now the only thing she does is that the carb overflows, when I don't close the fuel tap, i think the float needs adjustment.
I also checked:
fuel tap
points, which look not good, they where all mudded so I cleaned them, but havn't tried out if they were the cause (definitely replace those no matter what)
condenser, I checked it with my multimeter
and I'm disassembling my carb as we speak
If you have any ideas or maybe had the same problem please share them, a thing I noticed is, that she doesn't have quite the power she used to have since all of that startet so maybe it's just bad fuel, but again, why does the main problem start 20 miles in my trips.
