Problem with any "quick fix" spray with an assembled engine running is - you're washing down the cylinder walls with whatever you spray. Water is the safest cause it won't cut the oil film between piston/wall as easily, so long as you don't use a garden hose.
Since the heads are off, Easy-Off oven cleaner and a stiff fiber brush always worked for me. May look different in person, but the head doesn't look that bad, not great but not alarming... unless it's low miles since last cleaned.

If you are "washing down" the cylinders you being waaaay over aggressive ... As I mentioned earlier I've done this many many times over the years at the shop and never has a problem
