If you do wind up going up Rte 7 in CT up through MA and VT, be sure to cross back over into NY and do 22 south along the VT/MA/CT lines....very beautiful in spots (but a bit of a rough road north of Austerlitz). At the area where CT, MA, and NY come together, from the Rte 22 side, is simply stunning.
The stretch of 202 along the East side of the Hudson, across from Bear Mtn State Park is pretty neat with a couple nice scenic stopoffs. I seem to remember enjoying 301 from Cold Spring to Carmel, in NY, too.
Rt7 and Rt22 I think are the best two rides in the area. Rt 7 was paved last year. Two state parks on Rt7 and a scenic overlook on Rt22 that can't be beat. Housitonic Meadows State Park has a free day side. Parking lot, picnic tables, and one questionable toilet. I always stop there to smoke a cigar.
Rt 7 and Rt 22 are good roads, like CurlyBill said. I rode those up into Vermont a couple of years ago. Really nice riding.
Or head to Lake George and ride the back roads. Lake Placid is a couple of hours north of Lake George.
I'm over in that horrible state Rydeer dissed and there are some really nice roads here. You just have to get down to the Pinelands area first. You don't have to pay to get out of the state, you have to pay to get into NY. lol
I can be in Cape May from my house in about 2 1/2 hours. It just depends on what type of riding you want to do.

Living in any of the suburbs of NYC sucks. I'm in eastern Nassau County. Almost an hour before you get any real riding in.
And coming home from NJ? Sometimes spend hours on the Staten Island Expressway and the Belt Parkway getting back home.
You didn't say what kind of roads you were looking for. I prefer winding country roads, so I go to lower upstate NY, Bear Mountain and/or Harriman State Park and the surrounding areas, beautiful scenery.
Go to google maps and look for whatever else interests you, like food!! There's a place called Rhodes North Tavern that I've eaten breakfast at, outside on the deck with a stream rolling past.

or go 287south to 202 to New Hope Pa (crowded on the weekends lotta bikes)
