Shortly there after I felt it needed way more power and found the Stage V Shredder Kit in the SE catolog.
Long story short it has been installed and Dyno tuned.
I notice it still only revs to 5500....?
Should it not rev as high as the Dyno sheet?

Unfortunately the dealer can only use the SE Street Tuner but it only allows for very minor/no changes mostly to make the EPA happy. No rev limit changes.
You can always upgrade to a TTS or PV and have it tuned. Set the rev limiter wherever you want it as well as anything else needed to maximize power, smoothness, response, and fuel mileage.
It will also run cooler.
It can always be reflashed back to the Street Tuner calibration if need be.

That is the one that you want as it allows for more adjustments.
If you're hitting limiter at 5500, and you don't have cables to hook the tuner up and look at the file, I would go back to where I had it dyno tuned and have them take care of it.

The pro super tuner allows for rev limit changes to whatever is desired.
Some S/T calibrations have speed limits you may be coming up against before the rev limit?

I've never seen a speed limit on all of the settings I've seen for the super tuner. It appears that redline was set at 6200 on the dyno. If they did somehow, purposely or on accident, lower your limiter, changing it back to 6200+ should only take them a few minutes once they get your bike and tuner hooked up to their PC.

I road today and wound it up in gear....it looks like 6000.
With the clutch in 5500.
I installed the multi color tach/speedo. This is how I now see the rev limit better.
