Default Intermittent dying problem

Hello All, I have a 2001 Soft Tail. I have a very strange problem. The dealer could not figure it out, and now it is at a private shop and they are baffled. I will tell you first off, it is not vapor locking, it is not the fuel pump or fuel filter. I can ride for 1,2 even 3 weeks without a problem, then suddenly it starts happening and continues for some amount of time, then goes away again. I will be riding along, running fine, then I have to let off because traffic slows in front of me. When I go to throttle her back up, she kicks and spits and will not go. If I keep the throttle steady it will eventually smooth out. If I come to a stop, I cannot let her idle. If I do after a few seconds she will go to a very high idle, spit back thru the throttle body and die, so I have to feather the throttle at a fairly high rpm. I have to let her sit for about 5 minutes then she starts right up. It makes no difference how much gas is in the tank, temperature does not matter and you never know when it is going to start happening. Has anybody out there seen this before?
