Synthetic or Conventional oil?
I think a lot of builders don't do syn at that point because they want to do a short change cycle for break-in so why waste $$ on syn.
Oil technology has changed dramatically in the last 20-30 years. The old reports of poor engine break-in, too slippery, too thin, causes leaks, etc.. were running rampant when synthetics hit the mainstream around the late 70's.... Little was known, and few had personal experience with synthetics back then. Many people wouldn't use it for those reasons. Old habits die hard....
Currently there are several high performance cars that are delivered from the factory with synthetic oil (Porsche & Corvette to name a couple).... they aren't buying back any engines on warranty claims, from oil issues, that I've heard about....
I believe synthetic oil is superior to conventional oil, in several areas. It's ability to resist break down at higher temps than conventional, is the main reason I use it in my Harley (air-cooled) engines.
That being said, a quality conventional oil will allow you to drive any car, truck, or motorcycle for many years and many miles with no oil related problems....
