I'm trying to sort out what I need to do for Clutch, Brake, and wiring. The Burleigh guys tell me that these bars have an 8" rise. There seems to be some slack in everything, but I'm not sure how much I can get away with. My question is, can I just go to Harley and get longer cables/hoses? What increments do hey come in? Is aftermarket a better resource? Is the wiring a cut and splice kind of thing, or are there extensions?

I don't have all the answers for you but I have contacted Magnum Shielding about this and they were extremely helpful. The full set of cables are brake lines was going to run just shy of $400. The wiring is a simple splice to make them longer is needed. I don't know of extensions you can buy but they are easy to make. I might be wrong about a kit for them.
