IMHO... your issue is NOT the brand of tire on the bike, there would appear to be something amiss... tire leak (low psi), bad wheel bearing, bad alignment, etc , etc.
NOTE: You said you frequently add 5 to 10 psi., 10 psi is a significant loss of pressure.
You have an '07 bike, did you check the date code on the rear tire? It could be real, old with internal belt damage.. You have no idea how the prior owner treated it.
As eighteight suggested, just get another OEM Dunlop to match the front when you have the $$$, and make sure whoever does the work, inspects the wheel, tire, bearings and mounts it with proper alignment, belt tension, etc...
Again IMHO.... your priority should be getting that "the rear feeling like it fish tailing" sorted out. It could be a sign of a potentially dangerous issue like a tire or wheel bearing getting ready to fail. I wouldn't be riding it until I could figure out the cause of the "the rear feeling like it fish tailing".
You have plenty of time to decide which is the best tire for your riding style for the next purchase.....
Good luck getting it fixed. You will enjoy the bike once it's sorted and running well....
PS- I just noticed, "well winds supposed to b close to 90 mph again today". That alone could cause "the rear feeling like it fish tailing". I wouldn't ride in those conditions. Any high winds can cause handling issues, but could also mask another, possibly serious, problem.
