I assume the overwhelming majority of vehicles on the road today having automatic transmissions is the reason I see people asking what RPM/speed to shift at. If you grew up learning on manual transmissions you know it doesn't work that way, it's all based on feel and sound, how much load you're putting on the engine, how hard you're accelerating, traffic and road conditions, etc. Basically you shift when it's time to shift.
You are just going to have to hear and feel it, especially with a trike, I had the same conversion on a 09 Heritage, you are trying to spin a whole lot more mass, and have a **** ton of more tire contact, the manual isn’t taken those factors in.

While his answer was a little tongue in cheek, 125 mph is just as legitimate of an answer as about any other arbitrary number, refer to post numbers 2,3,6,7 and 11.
IThe manual says at 45mph but that seems low.I have to ride about 20 miles the speed limit 50 miles an hour and it is well patroled by the police. So what speed do I change gears at?

regardless, even if stock, if there's traffic on that 50 mph road, I'd be in 4 just to keep RPM up in 2500 and up range
Reason? If I had to get out of the way of some knucklehead in a hurry, a stock 88 needs all the HelP it can get by being near it's peak HP
I'd suggest you buy a tach so you "know" know what rpm you're running
