Anybody got a solution to change the awful system of fastening the bags to my Heritage Softail with a quick release system? Whilst were at it, also any recommendations to restore the shape of the bags?

Not sure what year your bike is, my 2020 heritage had this setup on it when I bought it. I can get them off easy enough, but it takes me 3 hands to get them back on.

There are various companies offering "Heritage Bag stiffener kits"..
Boss Bags has a good one, and I believe they used to offer the service to install it.

The link @hattitude provided above is the stiffener kit I used, going on 9 years, still look great.
You'll find that each of the topics you're inquiring about have multiple solutions with the same end results. I can't say that any of them are better than the others because each will have their pros and cons.
Personally, I don't use a quick detach system since I remove the bags infrequently. For the saddlebags shape, I used the Harley Heritage flat top kit. It does work. It's major drawback is that you can't expand the saddlebag opening to put an oversized item in it. I did have to replace the plastic that kept the form of the lid after 10+ years. Here's how I did that.
Now, after 13 years, my bags look like new. It always irks me when I see a picture of saddlebags that look like they spent an hour in a cage with a gorilla.
Thanks for all the replies, they are really appreciated. I emailed leather lid inserts and, potentially, the postage to the UK is nearly as much as the item itself....OUCH!
