Well IMHO the MoCo made the Fatboy kind of ugly in 07, so with that being said, I love my 06 Fatboy. But of those 3 I would take the Cross Bones, its more unique than the Fatboy.
I have the Fatboy, and LOVE this bike. Very versitle, and is well supported with a great history of happy owners.
The CrossBones looks to be an awesome new generation bike of old-school charm. This is very good looking in person, and I think a lot of neat custom treatments will really set this bike apart from so many others once folks get started.
Personally, I will always need a 2-up capable ride; so no matter what I look at, I will always be thinking about my wife being on-board too.
