Re-lacing a wheel?

Stainless rusts, also. Slower maybe, but it will rust. I have a buddy in FL that has an 80 spoke front wheel on his FXSTD and his replacement wheel is about $600... he is having the same discussion with himself...
Ultimately, using SS spokes and a strip of really fine emory cloth to polish the spokes about once a year would be the longest lasting solution I would think.
You better watch out or you will get in the wheel truing business and everyone in your area will start bringing theirs to you. I would post a message in the DIY area and get tips from anyone that does this on a regular basis if I were you, then dive in.
