The fall away test is really the only way to go for adjusting the headset, I don’t use a torque wrench on mine, I do it by feel. One good way to test your headset is to get going around 40 MPH and let go of the handlebars. If the bike goes into a wobble on decel between 40 & 30 MPH then the headset is too loose, tighten it up a little and try it again, when the wobble goes away you got it right.

when you experience the wobble, immediately take an offramp and see if you can get it in the other direction. I get a bit of wobble at 80+ into a headwind. If I turn 180 and ride 80 with the tailwind, it is solid as a rock. this tells me the headset is fine. I think the super wide bars contribute to bad aerodynamics.
Too F'n funny...curiosity got to me. So i went on a ride and guess what? I went around 75 - 85 mph on the freeway and i had wobbles....so i then wanted to see what happened when riding one handed, wobbles went away. Well aggro you hit it on the spot. I never had this problem to this extreme with any other of my bars. It must be the WIDE - lower - kite like posture the bars give you. THANX MAN...i feel like a moron!
