I am changing out both fenders and gas tank on my night train. bought some new tin and had it painted...I am getting quotes of about 5 hours to change out...Does that sound about right???
I know I could do the fenders myself, it is the gas tank that worries me...lol
I have had the tank off, that is very easy. I did not however remove the fuel pump, sending unit. I just had it off to replace the rocker boxes. I have another set too that I want painted and it is the rear fender I was worried about.
I have done what you are doing. The big thing is get a service manual it helps. Get new fuel line clamps. You will need them. And have plaenty of time and patience. Be careful pulling the fuel gauge sender out so you don't bend it and if its a fuely there is not a lot of room to get things out thats where the service manual comes in handy.
I did mine in about 4 hrs. thats both fenders and tank.
Good luck
The tank is a piece of cake, it's the rear fender that's going to be a pain. You will have to splice all the wires for the taillight and turn signals. When you put the tank back on, make sure you don't crimp and wires or vacuum lines.

Getting them off is the easy part.........getting them back on, make sure that you take your time and don't scratch 'em.
When I re-installed the tank, I went to pep boys and got 5/16 fuel injection hose clamps, they wrap around the hose in a solid band and wont dig into the hose like a worm clamp would. Also remove the clamp from the primary side, much more room to install a clamp with a head on it than the other side. (right on top of the rocker box)
i just did it last night....my deuce is a little different on the fender struts but its just a take your time thing....go get some of that blue tape to stick on the fender struts so as not to scratch the rear fender. mine has a carb so i dont know about the fuel pump thing but take your time and make sure you have a big enough gas can to drain the tank...good luckand lets see that new paint when your done!!
