I am looking to buy a set of these Fat 52 Spoke wheels. The description reads that they include high-polished stainless steel spokes. What does this mean in terms of upkeep? Are they going to be as clean as chrome? How does the "high polish" hold up?

That's what I've been reading, but most negativity revolves around the spokes leaking. I also saw a post or two about the spacing. I have not seen anything bad about the quality of the wheel. I'm gonna take my chances and run some tubes.
As far as the upkeep is concerned, it depends on what you have to compare it to. If your bike has stock spoke wheels, then the Mammoths will be easier to keep clean since they're bigger spokes to wipe and fewer of them depending on which set of spokes you currently have. They will look nice and probably not look too much different than chrome since they will be surrounded by a chrome rim, but still won't be chrome. Depends on how much "bling" you want from your wheels.
I love my Mammoths. They have not leaked and the spacing was perfect. You can't tell the spokes are stainless. They bling factor is off the charts. I love them.
Ordered set with pulley and rotors and was sent wrong axle sizes along with wrong pulley. 200 mile first ride after bring them home and was caught in the middle of nowhere with a failed front wheel. Spokes leaking so bad that it immediately ruined the new Metzler.
Going to fight with them for money spent on tow bill and tube and new tire. DNA will not return phone calls. Probably will have to turn them into BBB.
