You can do that no problem, but the reason for upgrading to the chrome/stainless is for looks. The chrome is way easier to maintain than the stock Cad plated ones. If you are in an area with a high moisture content the rubber may even promote deterioration of the new chrome by trapping the moisture in.......just a few things to consider.
I had planned on putting them on but forgot until after I had the cables on. After getting some appreciated input I've decided it's not worth the trouble and maybe even downright dumb to tear the cables off again. The new cable adjusters are more narrow so they don't fit tight on them anyway.

Your new cables should be internally sealed with an o-ring so there is no need to put a boot on them. Corrosion will hapen much more quickly if you put the boot on.
