Next question. Do you think I can run the 21x3.25? If so what tire size will work with my heritage fender? If possible, I would like to stick with a 120. I'm on a 120/70zr19 now with my 19, but I'm afraid it might rub with the extra couple of inches.

You can run a 21" with a Heritage fender or you can raise your stock fatboy fender. My experience with a 21" rim and a fatboy fender was that the tire rubbed on the fender. Call up Phil or Robert at Hogpro, they will take good care of you.
