I have a similarly modded sled. I too was concerned about the possible loss of power from changing to fishies. I went with baffled duals from Python. I was running VnH BRs 2-2s. The Python also has a crushed head tube to increase the back pressure. Even with baffles, these are pretty loud. Not as loud as non baffled, obviously, and they sound like they have a lot less decel pop as my friends with the non baffled Samsons.
I did get mine re-dyno'd, but didn't really have to. I didn't feel anything in my seat-of-the-pants Dyno. The jets in my carb work fine.. I really did it to get the new numbers she was turning out.
Now I have to get back to rearranging my beanie-babies.

I have the Samson Tru-Dual 33" fishtails with removable baffles and tips. I have found the best sound (not necessarily quieter) from my system is with the baffles. The baffles are really just foot-long perforated metal tubes (with a thin, round bar that runs across the diameter of the baffle - I suppose to make it easier to insert and remove the baffles and acts as a back-pressure inducing device) that goes inside the end of the exhaust right before the removable tips. The system I have, is FAR from quiet. It is usually one of, if not THE, loudest bike in the groups I ride with, and I ride with folks that all have aftermarket exhausts.
The baffles are far from being a muffler. The sound with them is a little deeper than without and reduces the "tinniness" sound produced from the exhaust valves closing that accompanies a fully-open exhaust.
My suggestion is to get the type of system that allows you to remove the baffles. You can always run the system without the baffles, but you will have a hard time adding baffles to systems not designed for them. Best of both worlds, if you get my drift.
I have a 95CI motor with gear-driven cams (4* retarded) and a modified fuel/timing system (PCIII USB), and I have not noticed a drop in performance with the tru-duals. I am sure there are performance increases to be had with a properly designed and tuned 2 into 1 system and matching components, but I have more than enough power to do what I want/need with my bike.
I didn't buy my bike to race, so squeezing every last drop of power out of my bike is not a priority for me. 90HP at less than 5500 rpm and 100lb/ft of torque at less than 4000 rpm from my bike works great for me. My bike is a heavy bitch at about 750lbs (plus me at 180lbs and occasionally my wife at 130lbs), so low-end grunt was my goal. Tru-duals did not, in the end, hurt my bike any.
