You can switch them out if you want to, can't think of any reason not to if you like them better.
Personally I would go for one of the floating disks that Harley and other make.
They work better than the solid disks that are on your bike now.
As for the fit, check to see if one of the replacement disks in the Harley accessory catalog that fit a 2011 will also fit an 07.
If it does then you should be able to swap your 07 disks for the newer 2011's with no problems.

PS. Make sure you use Lock-Tite on the bolts when you put them in to make sure they don't come loose later.
