There are a few variables to the concerns you mention-

V&H exhaust is prone to popping, regardless of 883, 1200 or 1250. You can reduce/eliminate it by using Thunder Torque Inserts, and the added benefit is more low & mid range power.

Regarding overall power increase from the 1250 conversion...have you finished your break-in period yet?

Did you upgrade the clutch? As a rule the clutch that comes with the 883's cannot handle the power of the 1250 conversion, and when you go to accelerate you will not feel most of the extra power because it is being lost in clutch slippage. Energy One clutches and clutch springs will make a huge difference in the power you feel. Here's a link to them. EO Clutch

I have done a very similar upgrade to my 883 and it has all the power I will ever want.

Below is a vid of us playing around a bit with the power outside the shop.

Besides the TTI's and a stronger than stock clutch, After your break-in is done, I would recommend you doing some auto-tunes per the video above.
