For tires, personally, I'd stick with modern treads to handle your varied wet conditions there. Those vintage tires, or alternative tread tires, look cool but I'm doubtful they perform as well or reliably as Michelins or the like...after all, the tires keep the rest of the bike off the road, and you with it. Rog runs some cool tires so maybe he can chime in, but the ones in the pic look too squared off to me to lean properly...
I'm 6'3" and 210. My XL1200T Super Low fits me fine. But my 03 883R was from a time that HD made big Sportsters. It is the tallest bike that I have. One sits high off of the ground with the older Sportsters.

We had a gy working with us that was very similar. He was around 300lbs & had an old 80s modal cb250 Honda. He looked a bear in the circus on a scooter riding it. We used a sundial got his 0-60 time.
