What size and style of bolt is holding my shocks on?
What is the torque spec.?

Strip it!? I did that a few weeks ago. I found a bolt that would work temporarily, but I would go get the real deal at a dealer. I couldn't find one that was quite the same and had to use something close, and cut it until my dealer could get a bolt ordered (you think they would have em eh?). Sorry, don't have the torque spec. on me. Just tell the dealer the dealer what bike you have and they can look it up for you in the parts catalog.

Is it an Allen or a Torx bolt?

It is a #50 Torx on the bottom bolt...probably the same up top.

Torque spec is easily found in the service manual. Reccomend ya get that if you are going to do any wrenching at all. I wouldn't want to trust any joe schmo when its my butt on the line

The mannual is on the way, but I was hoping to get the shocks on now.
Could you look up the torque spec. for me?

I do not have an Iron manual. However the torque values for a 2007 Sportster are 45-50 ft-lbs/61-68NM

stupid question but...what did you guys use to take off the stock shocks? having trouble getting the bolts loose..
