Default VERY touchy throttle

I have a 2007 XL 1200R, EFI but with throttle and idle cables.
I changed the grips from the stock to H-D Nostalgic grips. I followed the procedure for throttle adjustment in the service manual but it was my first time doing it.
Now the throttle seems very touchy, I moved my hand to activate the right turn signal and the bike took off. There's very little, if any, resistance. When I first put the right side controls on I had the grip pushed too far onto the bar, the closed end was rubbing against the bar end and the throttle wouldn't spring back to idle when released freely. So I backed the controls and grip off a bit and it seems fine. Except that now it's too sensitive to give it the gas. I don't recall it being this sensitive and there's more resistance on the throttle of my Road King.
I was thinking of pushing the grip and controls onto the bar a bit so there's some resistance but that just seems to possibly hinder the spring back to idle when released and the bar may just wear down the end of the rubber grip. So that seems wrong but I don't know.
I'm thinking maybe I didn't readjust the cables properly and need to start over again.

Any ideas of what I've done wrong?

Thanks.

It sounds like either the cables aren't adjusted properly or the cables are binding someplace and not closing completely. I would start by doing a visual to check that the cables aren't binding anywhere and that cable play is free and then go on to resetting cable tension.

There should be a star shaped friction screw under the throttle grip.
try tightening that up to put some resistance in the throttle.
I had the same problem and that fixed it.
just make sure the throttle will still return when you let go of it.
Peace

wouldn't loosening the top cable a bit give you some more slack? I would unlock it and give it a turn or two and see what ya got.
