Will polishing the heads reduce the compression ratio much? Is it as simple as getting one of those porting/polishing kits from a company like Summit and using a deft hand and careful eye?
It will not affect compression ratio, it is about fill rate, polishing will help to reduce the restriction. Not same as porting, BTW.

I prefer to have CNC machines to it but if you are going to do a little and not get too crazy, you could get away with it. Smoothing the port out, perhaps. If I were to attempt something like that, I'd beg, borrow, steal some books to figure out how to do it. I wouldn't just go hogging out a set of heads. I'd get a scrap set and play with it first before just diving into it. It is easier to remove material than add it back on after you grind it off.

Yes, I'm aware the porting (at least conceptually) actually removes metal and reshapes the chambers. What I didn't (and still don't really) know is how much tangible effect the polishing does with all else being equal.

I'm just going to be polishing up some of the rough spots in the casting. I will not be doing before/after dyno pulls on that. Not expecting that it will do that much either...but while they're off, might as well do it.
There was a time when polishing ports to a high finish was the done thing, but I seem to recall that is no longer the case. I'd leave well alone, or get them professionally ported.

I am considering doing a 1250 conversion on my 2012 883. Can anyone give me some feedback on your experience with this procedure. Drawbacks benefits etc. Any info will be greatly appreciated.
I have a 1250 kit on my mine. Not so much the extra 50cc being a big deal as the high quality of cylinders and pistons. They are top notch.

Ive had a few sets of heads ported over the years and nothing was polished on them. Im not for sure, but I think the port and polish term is tossed around a lot. I dont think polishing them will do hardly anything.

You're saying that Dan and NRHS have been banned from HDForums for providing the test results of a spark plug that Dan was asked to provide? So, because Dan's company didn't pay as much money as that spark plug company to HDForums, his objective results are nullified?
Personally, if this is the case, no-one on these forums should just accept that. Remember folks, it's us, the members, and our contributions that make up this community. Not the other way around.
