I searched but did not find an answer to the following. Is there any reason with an 07 Ultra Classic that is stock that I need to get the Harley store plug vs. the Champion variety ??

Simple answer: 2005 and later Harley-Davidson EFI systems incorporate an "Anti-knock" feature that operates by reading the current resistance through the spark plugs.
The use of any other spark plug other than 'Stock' (6R12) disables the anti-knock feature.
I have had my bike with autolite 4164's and the champs installed at different times on the dyno and both kept the ion sensing feature working properly. Unless you have a way to check, it might be smart to use the stock plugs, if you are concerned.

I'll make this simple: Use the stock Harley plugs. Did I say use the stock Harley plugs? Yes, use the stock Harley plugs.
I hadn't ever heard of the anti-knock feature but since Champion makes the HD plugs - oresumably a Champion or other branded stock equivalent would work just as well.
