I have a 2007 SG with a big bore kit (103) with S&S compression release cams and the heads have been worked.. My question is I used right at a quart of Mobil 1 oil in 3750 miles.. This weekend I rode 335 miles on Sat and when I checked my oil when it was hot it was down one set of blocks on the stick... Most of these miles have been at 70+ mph for long distances any help would be great...thanks
Unfortunately, some engines will use some oil. I don't know what kind of oil you use, but I had an Evo that was a burner from new. After having it apart twice, we got it down to about a qt. per 3000 miles. Like it or not, your dealer will NOT pull a motor using that little. On the other hand, I have had most of my bikes, (12), didn't use any, at all!. But, here's 1 thing that did change the amount of oil consumption in that EVO motor. I switched to Amsoil 20w50. When using Amsoil, I don't think I used 1/4 cup. I also started changing @ 4000 miles instead of 3500. Now I change @ 5000 and didn't use any in any of my other bikes. Be it better oil or better engines, I would think there are other oils out there that will replicate the Amsoil, but when you find something that works, it makes no sense to change.
I have a 2009 Ultra with 68,000 miles on it. I change oil every 7000 miles and do not burn any oil between changes. Just made a 3000 mile trip and oil mark is in same spot as when I left. I guess I just have a good tight motor. I use RP 20-50 car oil not their motorcycle oil .

I hear you,, been there done. Is that the total miles since rebuild? If soit may get better but then again depending on how loose or tight the clearances were set up at build would have an affect on usage.
Take a look in you intake and see if its pretty wet, I assume your breathers were replaced.
You can isolate the breather from going into the intake, by setting up drains to rundown the frame. Then run as usual and see if it decreases.
I had an 07 build that used a qt in the same amount of miles then went on a 4k mile trip and used 4 qts. That turned out to be due to wrong parts by the builder. Keep us posted.
My builder owns his on Harley Davidson dealership and is a stand up guy with a good building reputation... He said some will use a little more than others.. But it still bothers me lol...
I bought a Road King with 2000 miles.. Form day one until I traded it in with 18,000 miles, it used a quart every 1000 miles.. Dont know if not broke in right, I just knew to add.. I also carried a quart in the saddlebags for long trips..
