I am 6 foot 2 inches tall as well. I run a 10 inch shield with good success.

Everybody has a different trunk length. I am 5'10" and use 9" LRS for max effect, if I go to a 10" the edge is in my line of sight.
To OP: Tape a piece of cardboard to your windshield, extended above the top edge. move it up or down so you can see over it to see the road 20 feet or so in front of your bike of whatever is comfortable for you, then measure from center screw to top of cardboard. You will get used to the looks, even with a 10". If you get too short you will endlessly be buying one inch longer.
Inseam measurement is the main determiner of how easily you can get your feet flat on the ground while seated. Trunk length (seated height) is what determines how tall a windscreen you need. People of the same height can have variations in both inseam and trunk lengths. Giving your inseam length to a windshield supplier will help them little to none.
I have purchased about every shield out there and finally found the one! It's klockwerks flare 8.5 inch shield. It will actually measure close to 9 inches from the top edge of the fairing to the top edge of the shield. All I get is smooth air. I'm only 6' tall, I look over it and it really works as advertised. As an added bonus it allows the wind to apply downforce on the front end to keep it stable at higher speeds. It's expensive but you get what you pay for.
OP, I'm about your size I went with the LRS 8" in dark tint. I thought the 8 would be better with the dark tint. Happy with the shield, but could have gone taller in hindsight. A 9 would have been fine.
Different torso, different seat, it all makes a difference, it's what you are at comfortable, normal riding position, measure at what you think is your normal riding position
measure it. Ultimately you want the shield to be just below your nose so you can look over it. The recurve will direct the wind over your head that way but to answer your question your thinking is sound. I am just not sure 2" would be enough.
had my stock windshield cut down 1 1/2 cost $26.00, right height for me to see over it. Have a 2014 Road King. Cheaper to have them cut than buying a new one. My opinion.
