I have noticed that when you shut off the engine it will get hotterbefore it will start cooling down. So if your only shutting down for a minute or two I'd think that would do more harm.
I see you guys are riding baggers with fairings. Dump the useless air temp gauge and install an oil temp gauge. Its the best mod I've done on my 01 Ultra. I can monitor the oil temp and before it gets too hot I can pull over and shut 'er down to cool off. It's unlikely that you did any damage, but changing the fluids is definately a good idea.
Do you have part #'s for an oil temp gauge that fits in place of the air temp gauge?

The H-D sensor is a PIA to install according to the instructions, so most that have installed this unit have relocated the sensor into the oil pan. There is a second drain plug that is used for this application. An adapter is needed for this installation. I believe that the Wally's instructs you to use this application. This has been dicussed many times here, so try doing a search on it.
I think I would have the dealer download the parade map onto my bike if i lived in an area where I was going to spend significant amounts of time stuck in traffic.
Most later model bikes incoporate a heat management system. When the temp reaches a certain temp the system will lower the idle from 950 to 850,if the temp continues to increases it will start killing ignition to one of the cylinders but still allow fuel to flow for cooling. If the temp gets too high it will shut the engine off. I've had mine go into stage 2 heat management, but man is it hard to just set there and let it do it's job.... Hot as He!! to.
The bikes get hot no matter what you do. I have sat in 100+ degrees while waiting in traffic while riding Touring EVO's with no trouble at all. They get hot, but keep on going though. I very rarely shut them off though, I just waited with engine at idle.
If the Twin Cams can take the heat anything like the EVO's can.....there is nothing to worry about.
I just checked my head temp logs and it shows the head temp reached 360. I had my EFI map adjusted a little higher (14.2) in the cruizing range to get better gas milage. After last night, I reloaded the latest version of base map 368 to richen it up a bit. I also richened the AFRs at idle to help cool it down.
I'm still going to change the fuilds in the next couple of days.
I guess my next mods will be an oil temp guage and perhaps and oil cooler. I've been wanting the guage for awhile, just never had a need for it. Now I do!
I looked at mine again and saw it hit 320's. I think it hit the 344 mark after it was shut off cause it missed the temp values in between and those would have registered if it climbed throughout. I'm changing fluids this week anyways as my first service is due. I'm going to amsoil in all holes.
I think Amsoil is the best product out. I have used it before 2004 in my Springer, and have always in my truck, lawnmore.
In 2007 they say use Formula plus in the other two holes, I still use Amsoil 20/50 in all three.
My bud just had some cams put in his 2004 softail, and went with gear drive cams. He said his cam shoes looked almost new after 54K miles on Amsoil.
