We always just make plain vanilla and then add strawberries or other fruit if you like. Just the wife and I at home now, thank the Lord, so we always have lots left over and I eat on it for days. I think ours is a 6 quart maker. I think the key to home made is a good vanilla, cheap vanilla just isn't the same. Mexican vanilla is the best in my opinion. Plus the fresh eggs from our chickens makes it even better.

My girlfriend bakes a ton so she makes her own vanilla extract. Good vodka and good vanilla beans are all you need. (Not sure where she orders them from but they arent that cheap). She keeps a pretty good rotating stock of little jars.
When she first started making her own I had to do a taste test with store bought vanilla and the store bought crap was nowhere near the same level of taste as homemade.

I didnt know either but Im glad she tried it. The alcohol draws the oils out of the beans from what she said and she can get a few uses of each jar before the beans need to be changed out.
She made a bunch of them up and gave them away for Christmas one year to all the women in our families and it was a big hit. We love our baked goods and desserts lol.
