Service manual says to use "Special Purpose Grease Part No. 99857-97". Is it critical that THIS grease be used or can I use some other flavor that's already in my grease gun? It's a multi purpose lithium grease... Yes or No?
Yeah,that. I used to work in a frame and fork shop and we'd see a lot of bikes with the steering head races rusted, especially the lower. We'd pack the new bearings with this grease that's made for boat trailer wheel bearings, 'cause its formulated to resist water.

Thats whats in my gun right now. Do I need to worry about mixing that with the factory grease thats already in there?

Good question on that grease. I'm guessing it will be ok especially if it is applied as recommended: pump it in until it starts to exit top and bottom of the steering head....
