Maybe you should have given the used Ultra a thorough service before taking it on such a long ride. Possibly even had a dealer or a reputable indy shop check it out. How much did you ride it before you took off on the long trip?

This, I traveled many parts of this country many times on the dreaded shovelhead with no big issues and the ones I did have were taken care of by me on the side of the road or in a parking lot somewhere. Never had a tow or a dealer visit doing it.
Do a good pre trip go over, plan a little. Going into anything in life clueless usually hurts.
Not sure what you expected at the “Big Texan”, it’s a tourist trap, the food is just passable. We ate there in June, without high expectations and needless to say, they did not exceed the low bar.
As far as your bike goes, you should have gone over it with a fine tooth comb and changed ALL the fluids when you purchased it. How you lost a saddlebag is beyond me. There has been a cure for those 1/4 turn Dzus fasteners out for a long time, called a bolt, nut and a couple of fender washers.
