A while ago someone told me about some headers that looked like V&H dresser duals but had a hidden crossover which should help maintain back pressure and therefore low end torque but I can’t remember what they are.
Does anyone know what they are and whether they’re available for the M8 tourers please?

This is incorrect
X over helps eliminate back pressure via scavenging - best application is for a big motor build (on both of mine)
By itself you do lose low end torque - however by using the correct baffling can regain it for a smooth dyno curve (again, big motors builds benefit the most)

For M8s - Fullsac makes a de-catted, dual, header pipe with a X over.., likely others exist
S&S PowerTune Duals. They are available for the M8. Note that you must use pre-M8 mufflers with these due to the diameter of the right side outlet.

Better scavenging (removal) of the exhaust
Back pressure (for torque) would have more to do with pipe diameter - until you incorporated the slip on baffle - then it a balancing act between the two
